After a tiring full day event, my wife asked me to cook steak for her, again!
I would like to stress again and again! Cooking steak is VERY EASY! All it takes it 10 minutes of your time! IT IS REALLY EASY, AND THERE IS NO MAGIC!
Step 1. You got to buy a good steak. This is I think 200 Days Grain Fed Rib Eye. I usually buy steak for 3 places. A) Culina @ Dempsy. It is expensive, but you go there if you cannot buy from Hubert. B) Hubert @ Dempsy. Normally, they have really nice beef. But if they sold out, then, you have to go Culina. C) Meidi-Ya @ Liang Court.
Step 2. Heat the wok. I used a La-Cruset. It is a bit Ex. But I am not the one who buys it. :)
But in order to make good steak, I suggest you to invest a bit. As it reallys cook a good steak using it. La Cruset is available at Isetan and CK Tang.
This is the fire you should use. So that it gives constant heat.
Step 3. The beef should be placed in a cool place, but not the chiller or the normal firdge. Only take out the beef when your steak pan is warm up and hot.
So, as you can see, there is NO MAGIC at all. It is just pinch of sea salt and black pepper. Do not marinage the beef. As you only do so when the meat is no longer fresh or good. So, when your La Cruset is heated up, then, you season it with salt and pepper. Please be aware that if you place the salt too early, the water within the beef will start coming out.
Step 4. After you have done the salt and pepper, now you can place some AIL and THYM olive oil. I got this from Little Provence @ Tanglin Mall.
Step 5. You have to touch the beef, so to make sure it is lying flat on the La Cruset.
Step 6. Observe. The steak will start to become cooked at the lower half. You can tell as it turns brown. For a 200-250g steak, usually it takes aobut 4-6 minutes to cook one side.
Step 7. After 4-6 minutes, you turn the steak around.
Step 8. Then, you wrapped the meat in a aluminium foil, and then a cloth outside so that it does not loose too much heat. You need to let it rest for 8-10 minutes. This is because you use 8-10 min to cook it.
That's it for the steak. I hope I really show that it is very easy to cook a steak.
Next, I cook a easy Tomato based Spagetti.
Here are the ingredients.
Onions. Dice it!
Tomatoes. Good one. Half it.
These tomatoes really taste great. Lots of juice and sweet.
Left overs ham. I happen to have some left overs.
Dice the ham.
One stalk of Celery. Dice it. You need this to add some crunchy into the Spegetti.
Of course, you need to cook your noodles. Heat up a pot of water. Pinch some sea salt into the water, along with normal Olive oil. Then, use a constrainer to rinse the noodles with cold water.
Just in case you are wondering what kind of noodles I am cooking? I think I bought this from Meidi-Ya @ Liang Court.
So, cooking part is easy.
1) Heat up Pan.
2) Pour in Olive oil, wait for it to heat up.
3) Once the pan is heat up, put in Onions to brown it.
4) Put in the ham. Stir fry it.
5) Put in the tomatoes, and tothers.
6) Use a spatula to turn the noodles around and around.
7) If not enough sweet, then, pince some sugar.
8) Add a bit of water, so that it has some liquid look.
9) Add tomato sauce.
10) Taste it until it is so good.
This is the end product.

So, tonight dinner is Steak and Spagetti.
Look at the meat color after resting.
Tonight wine is.... It's a 2006 Chateau Mayne-Vieil Fronsac. Very nice.
Again, you cooked such a nice steak, you got to have some pairing wine.
I gave 2ml for Jay. He likes it.
