Cook with Ken: Day 2 Dinner

When wife is on business trip, it is up to the daddy to cook a nice meal for his kids!  Let me see... what can be cooked easily?

Usually, when we go to Lim Chu Kang, we will always buy a whole bunch of Basil.  So, we have a bunch of basil, what can we do?  Let's cook 3 dishes with it!

A.  Chicken + Mushrooms + Basil

1.  Garlic & Onions.

2.  Chicken, cut into small pieces, and marinate with salt and white pepper.

3.  Basil leaves.

4.  Oysters Mushroom.

Too cook this is simple.

- Heat the wok.  Some cooking oil.  Bring it to boiled.

- Onion & garlic are in when the cooking oil and wok are hot.

- Put chicken in, stir fry.

- Put mushrooms and basil in, stir fry.

- put in 1-2 cup of water.  bring it to boiled.

- simmer it for 10-15 minutes with middle fire.

- stir it a bit every 4-5 min.

- add in salt, and abalone sauce to add the taste.

after you add water, just simmer it.

When it is finish, it looks like this.  Then, you put some parsley on it to make it nicer.  This is good for the kids because it has tasty sauces to go with the rice.

B.  Pork + Basil

1.  Need Pork.  Those fat fat pork.  I defrost it from the fridge.  So, let the warm water run thru it.

2.  Cut the pork into slices.  Do a quick marinate with some flour, salt, white pepper, and 4-5 spoon of sugar.  This dish you need lots of sweetness in the pork meat.  Marinate it for 10 minutes.

3.  Of course, we need basil leaves.

4.  Of course, we need the Thai Fish Sauce.  You can get this from NTUC, or Beach Road Golden Mount.  It is great for salad, and it is great for cooking Thai style dishes.

5.  Some garlics.

- Heat the wok.  Some Oil, bring it to boil.

- Garlic goes in.  Stir it to golden brown.

- Meat goes in.  Stir fry it.  Add Fish sauce.

- Add basil.  Keep Stir fry it.

- Don't worry, the end result is no sauce.  but the beauty is to get the sauce on the meat itself.  So, keep stir fry it.  Don't over cook the meat.  Stir fry for about 10-12 min is enough.  The pork will have some sweetness and the basil supply the aroma and taste.

c.  Basil Egg Soup

1.  Slice the pork (fat pork meat).  Marinate the Pork without the sugar.  Marinate with salt, white pepper and soya sauce.  Most importantly put more starch/flour in there.  so that the meat is sticky sticky in the soup.

2.  Boil a pot of water.

3.  Throw in the Basil leaves with the stalks.

4.  Throw in the pork meat cover with starch.

5.  Batter an egg, and then slowly pour inside.  And use a chop stick to stir it.  So that the egg is evenly spread out.

And then, add in salt, (lots of salt), and soya sauce, and white pepper.  There you have a very nice basil soup.  In Chinese we call it 九层塔汤.  Good for your eyes.  Most of people don't like this soup.  But it is a healthy soup.

The key concern is the Kay Kay behind.  How do you make him eat.

Well, by playing lots of gan-bei game.. with the spoon... he ate a whole bowl of rice today.  Bravo!

After that, we have some water melons.

After that, we go downstairs walk about 800 meters.  And end up at the groceries store downstairs.  Jay and Kay loves to play chasing and hide and seek in that groceries store.

Then, we clean up a bit.  We play bey-blades.

Then, I read books to them.

Then, I acted a play (i.e. Angry Bird story) to them.

Lastly, after 13 songs with my Ukelele.  They finally asleep.  This is a typical day for a daddy when mommy is away.
